Olive Oil: The Essence of Italian Cooking

Virgin olive oil, also from the first press, offers a milder flavor ideal for cooking, while refined olive oil, made from later presses, is excellent for frying or sautéing due to its higher smoke point.

Olive pomace oil is extracted from the olive pulp left after the first pressing, often using heat and solvents. While it lacks the robust flavor of extra virgin or virgin olive oils, olive pomace oil has a higher smoke point and a neutral taste, making it ideal for high-temperature cooking, such as deep frying or roasting. Its affordability and versatility make it a staple in both professional kitchens and home cooking.
